Quick & Easy Recipes

Italian Stuffed Shells
12 or 16 oz. pkg. of Jumbo Shells (40-42 shells)
30 oz. Ricotta cheese
8 oz pkg. shredded mozzarella cheese
2 eggs
1/4 c. dried parsley
1/3 c. bread crumbs
1 tsp. salt
1/4 tsp. pepper
1-2 cloves minced garlic
1 tsp. Italian seasoning
1 jar of your favorite tomato sauce
Prepare macaroni shells according to pkg instructions.  Preheat oven to 350 degrees.  Combine all ingredients and stuff rounded tablespoons of cheese mixture into each cooked shell.  
Arrange shells in 13x9 baking dish SEAM SIDE DOWN. Spread tomato sauce over shells.  Cover with foil. Bake for 15 minutes.  Remove foil and bake approx. 15 more minutes.  
Makes approx. 8 servings


Baked Lemon Chicken
3-4 lbs chicken pieces (bone in -we used drumsticks)
2/3 c. lemon juice
2 Tsp. Garlic powder (if using Garlic salt- omit tsp of salt)
1 tsp. salt
2 tsp. dried parsley
4 tsp. lemon pepper

Spray 9x 13 pan with cooking oil spray. Place chicken parts in single layer. Cover with lemon juice and spice mixture.
Cover the pan with foil or wrap and place in refrigerator to marinate up to 24 hours.
Preheat oven to 425. Bake uncovered for 50 to 55 min until the skins are crispy brown and the chicken cooked through.
Turn chicken half-way through the baking.
Serves 4



Chocolate Chip Cookie Dough Brownies
Bake a pan of brownies as directed and let cool.
Cookie dough topping (icing):
½ c. butter or margarine
½ c. brown sugar
¼ c. sugar
2 Tbsp. milk
1 tsp. vanilla
1 c. flour
mini chocolate chips
Mix first 6 ingredients together and spread over cooled pan of brownies. Sprinkle with mini choc chips.

½ Recipe (for Betty Crocker Brownies in the Pouch):
¼ c. butter or margarine
¼ c. brown sugar
1/8 c. sugar
1 Tbsp. milk
½ tsp. vanilla
½ c. flour
mini chocolate chips
Mix first 6 ingredients together and spread over cooled pan of brownies. Sprinkle with mini choc chips.

5 Bean Soup -A highly requested recipe for the Dried 5 Bean Soup that the children put together at VBS 2012, as their "Project with a Purpose" the recipe is as follows:
1/3 c. split peas
1/3 c. dried kidney beans
1/3 c. white navy beans
1/3 c. pinto beans
1/4 c. pearled barley
Spices:
6 beef bouillon cubes (unwrapped)
2 Tbsp. dried onion flakes
1 Tbsp. dried parsley
1 tsp. dried basil
1 bay leaf
Directions: Rinse the beans, then place them in a crock pot with 7 cups of boiling water. Add spices. Mix thoroughly. Cook on "High" setting for at least 6 hours, or until beans are tender.
Makes approx 6 to 8 - 1 cup servings.
